Cheesiest Jalapeño Popper Stuffed Chicken

Okay....If you don't like jalapeño popper stuffed chicken then you're lying to yo' self. And if you haven't tried it well you're in for a treat!! This is one of my go to recipes and never gets old. I recently got an air fryer and used it to make this, however easily done in the oven (I'll list instructions for both below). Hope yall enjoy as much as I do!

What you need:
4 chicken cutlets, pounded thin (or two breasts cut in half longways, then pounded)
2 jalapeños, diced
4 oz greek or low fat cream cheese softened
1 cup shredded cheese of choice (I did half sharp cheddar half pepper jack)
lime
tbsp olive oil
garlic salt (optional)
crushed chips OR breadcrumbs of choice*
toothpicks!!!
* I use siete brand tortilla chips bc they're grain free and made with almond flour & I mixed the ranch and fuego flavors because I was feeling creative. You can use any chip you'd like and crush them up pretty small. Or if you aren't feeling chips you can just use panko bread crumbs
How to do it:
preheat your air fryer to 400, or if using oven 450
mix up your softened cream cheese, diced jalapeños (the more seeds you put in the spicier), and shredded cheese. spread some of your crushed chips or bread crumbs out on a plate in a thin layer (i say some bc i found it easiest to just add a little more after i rolled each chicken breast in them). Then, whisk together olive oil, juice from a lime and garlic salt in a small bowl
with your pounded chicken laid out flat, divide the cheese mixture evenly among the chicken and spread it evenly towards the middle of the chicken, then roll them up and toothpick the ends shut as much as you can so the cheese doesn't melt out.
brush all sides of each piece with the olive oil & lime mixture. then, one by one roll each piece of chicken in the crumbs
If using air fryer place two of the pieces in at a time for about 14 min turning halfway; if using oven spray a pan and bake for about 25 minutes
then, serve!
I served with avocado and a mexican corn and black bean salad! (the recipe is on my instagram caption). Would also be good served with brown rice, cauliflower rice, etc.
