Low Carb Shrimp Pad Thai

This is my healthy, low carb take on pad thai and it is totally delicious!!! It's so easy to throw together with any veggies or meat you like! The noodles are made from a Japanese Konjac root which literally has 5g of carbs and 10 calories and that's it! And they are the perfect texture for this pad thai you wont even know they aren't the regular noodles. This recipe would be good with shrimp like I used or even chicken or steak! Enjoy :)

What You Need:
- 1/2 pound of shrimp*
- 2 cups broccoli
- medium zucchini, cut in cubes
- half a large sweet onion, sliced
- handful sliced green onion
- 2 garlic cloves, minced
- skinny konjac noodles**
- 1/3 cup Trader Joes Island Soyaki Sauce
- 1/2 tbsp sriracha (optional if like spicy)
- salt & pepper
- red pepper flakes (optional)
- olive oil
- tbsp salted butter
How to Do It:
(1) heat a large non stick to medium heat with a tbsp of olive oil, add 1/2 the minced garlic once hot and then add shrimp to the pan with salt and pepper. Saute on each side for a few min until cooked through.
(2) While shrimp is cooking cut up veggies. Once shrimp is cooked remove from pan and set aside.
(3) Add a splash of olive oil, green onion & the rest of the garlic and saute about 3 minutes until fragrant. Then add the broccoli & onion and the tbsp of butter and saute about 5 minutes to soften, and then add the zucchini and keep sauteing a couple more minutes, stirring everything in the pan.
(4) Once all the veggies are cooked, add in the shrimp, soyaki sauce & sriracha and stir around and let simmer a couple minutes.
(5) While the shrimp and veggies are simmering in the sauce, rinse the noodles in a strainer (like the instructions on the bag say) and then add to the pan and mix in, and serve! I top mine with red pepper flakes
*I use half a bag of Trader Joe's frozen Argentinian red shrimp they're already peeled and deveined!
**i found the bag of skinny konjac noodles at sprouts in the asian aisle on the shelf! (picture of the bag is on my pad thai highlights on insta). Can also use miracle noodles which are either tofu or shirataki or even rice noodles if you aren't looking for low carb
