Crock Pot Shredded Korean BBQ (Bool Kogi) Tacos

These are sooo delicious and so quick & easy to make! The meat comes premarinated from Trader Joes so you don't even have to put the time into marinating it! I top with a super simple chipotle slaw and some kimche and that's it! Hope you enjoy!

What You Need:
- Trader Joes Bool Kogi premarinated boneless beef ribs
- tbsp gochujang sauce (not totally necessary just adds a kick)
- half bag of TJ's cruciferous crunch mix
- tbsp sauce from can of chipotle peppers in adobo
- 1/2 cup light mayo
- 1/3 cup non fat greek yogurt
- juice from half a lime
- Kimchi**
- low carb tortillas*
How To Do It:
(1) Place all the beef into your crockpot at the beginning of the day on low for about 4 hours. Once the time has passed shred the beef then add tbsp of gochujang and stir in, then let sit on low for about 30 more min.
(2) While meat is soaking up the juices, make the slaw/sauce. In a small bowl whisk together mayo, greek yogurt, chipotle sauce, and lime. In a large bowl take out half the bag of slaw veggies and mix in the sauce (i like to leave about a fourth of the sauce in the bowl to top the tacos with more)
(3) heat a greased skillet over medium high heat and toast your tortillas for a minute or two on each side. Top them with the beef, kimchi, slaw, and more sauce if you like and thats it!!!
*i used siete brand almond flour tortillas but they are a little expensive but such clean ingredients, for cheaper still low carb option mission low carb are great
**kimchi is totally optional but has so many good health benefits (GREAT for digestive system) and you can hardly taste it in this
