Loaded BBQ Grilled Chicken Salad

I absolutely love eating a good salad for lunch or dinner!! There's so many different things you can do with them and endless toppings to choose from! This is a quick and easy salad recipe that tastes delicious and is so filling!!


What you need:

  • chicken thighs or breasts (however much you want)

  • low sugar/low carb BBQ sauce*

  • romaine lettuce, chopped

  • sharp cheddar (shredded or block chopped up in small cubes which is my fav)

  • corn**

  • cherry tomatoes

  • avocado

  • red onion

  • ranch dressing of your choice***

  • eggs (to boil or can buy preboiled)

  • salt & pepper

  • garlic salt

  • paprika

  • cayenne

*I use Annies Organic because its pretty low carb and sugar!!

**i use corn on the cob and grill it because it tastes so much better than canned corn, but for ease you can get canned.

***i like to make homemade or with the dip packets because it tastes sooo much better than bottled


How to do it:

  1. If grilling, heat up your grill to medium heat. If using an oven heat oven to 375. Boil your eggs if not buying preboiled.

  2. Season both sides of your chicken with salt, pepper, garlic salt, paprika and cayenne. Rub olive oil on outside of shucked corn on the cob. Place chicken and corn on grill about 5 min each side. After turning brush with BBQ sauce and grill each side for about one minute.

  3. If using oven cook chicken with seasonings for about 30 minutes, take out and brush with BBQ then put back in and broil a few minutes.

  4. While the chicken and corn are cooking, dice up your veggies and cheese if aren't using shredded. I used avocado, red onion, cherry tomatoes, and romaine (duh its a salad)

  5. Once the chicken is done let it rest for a few minutes. Place your salad and toppings in a bowl and toss with ranch, top with chicken!!
