Spicy Shrimp Tacos with easy Chipotle Sauce

These shrimp tacos are SO quick and easy to make and have sooo much flavor! I like to use the Trader Joes cruciferous crunch and avocado as my toppings and refried black beans on the side! I also use siete brand almond flour tortillas but you could use any tortilla your heart desires. Enjoy!

What you need:
For the shrimp
- 1 lb of shrimp
- tbsp butter
- tbsp olive oil
- 2 large cloves garlic, minced
- 1/2 tbsp chile powder (less for less spicy)
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- tsp dried parsley
- dash cayenne (optional)
- salt and pepper
For the chipotle sauce:
- 1/2 cup light mayo
- 1/2 cup low fat greek yogurt
- tsp honey
- tbsp of the sauce from canned chipotle peppers in adobo sauce
- juice from 1/2 a lime
Toppings (optional)
- avocado
- lettuce
- cruciferous crunch mix from TJ's
- cilantro
How to do it:
(1) heat a large skillet over medium high heat, once hot add in olive oil, butter, and minced garlic. Let the garlic simmer a could of minutes then add in your shrimp (peeled and deveined)
(2) cook about three minutes on each side. While shrimp is cooking, mix together all of the chipotle sauce ingredients.
(3) Once shrimp is cooked, add in spices and stir to coat evenly! Assemble your tacos and that's it!
